WESTERN Carrot-Corn-Zucchini Pancakes with roasted tomatoes & rocket sour cream



INGREDIENTS & METHOD

6 tomatoes sliced lengthwise, 2 tsp. olive oil, red chilli powder, salt & pepper to taste - Roasted in a preheated oven at 180 deg. C for about 40 minutes.  Remove from heat and keep it aside for serving.

Self-raising flour-1 1/3 cup, milk-1 1/4 cup, plain yogurt-1/4 cup, 1 cup together - corn kernels, grated carrot & zucchini = In a large mixing bowl, combined together to a smooth pancake batter.  Cook both sides on a frying pan into golden brown colour.  Repeat with the remaining batter.

SERVING - Divide the pancakes among serving plates, sprinkle with roasted tomatoes and rocket, top with sour cream and serve
