KIWI Fruit & Banana cake












INGREDIENTS
  • 2 each -  ripe kiwi fruit & banana - mashed and added to the cake mixture
  • 2 each - kiwi fruit & banana - peeled, sliced for topping
  • 1/2 tsp. each - baking powder & baking soda
  • 1 tsp. each - vanilla & almond essence
  • 1/2 cup - melted butter
  • 2 cup - plain flour
  • 1/2 cup - shredded coconut
  • 2/3 cup - brown sugar
  • 1/3 cup - milk
  • 1/4 cup - plain yogurt 

METHOD

  • In a large mixing bowl, add all the ingredients (except peeled & sliced fruits for topping) - mix well to make a smooth cake mixture
  • Preheat oven for 10 mins @ 180 deg. C.  Grease a baking tray with butter or oil OR line a baking tray with baking paper.  Pour the cake mixture to the baking tray and bake for about 55 minutes to 1 hour or until cooked when tested with a skewer.
  • Cool in the baking tray for 5-10 mins then transfer to a wire rack to cool completely.  Slice and serve
