PUNJABI Kadai Mushroom

Stir-fried Mushrooms & bell pepper cooked in tomato-onion gravy with aromatic herbs & spices.  Goes well with any Indian bread varieties and rice dishes





 

Ingredients  

  • 2cup each of sliced mushrooms, bell peppers
  • 1 each of chopped tomato & onion
  • 2 tsps. each – finely chopped fresh green & red chillies, garlic & ginger, dry kasuri methi leaves
  • Salt to taste
  • 1 cup boiled milk
  • Other spice ingredients - Pinch of turmeric powder, 2 tsps. cumin seeds, 1-2 tsps. each - black pepper powder, coriander powder, garam masala, clove powder, cinnamon powder, cardamom powder, nutmeg powder, almond powder

  Method 

  •  Heat little bit of oil in a kadai, add tomato, onion, garlic, ginger, kasuri methi and chillies – fry for few minutes.   When cool, grind this mixture into a smooth paste.
  • Heat oil again in a kadai and fry cumin seeds, 
  • Add turmeric powder,  sliced mushrooms & bell peppers – cook until tender.   
  • Add salt, milk, grinded mixture and other spice ingredients – cook for few more minutes on a low heat.   
  • Remove from heat when the gravy is thick and creamy.
