THAI - Green Curry
Green curry paste Ingredients - 3-4 green chillies, 1 sliced onion, small piece of ginger & garlic, 2 lemon grass, 1 kaffir lime leaves, few coriander stems, 2 peppercorns, 1/2 tsp each of coriander & cumin seeds, little salt - raw items blended into coarse paste

Other Ingredients - Vegetables of your choice, salt, oil, 1 tsp. sugar, coconut milk 1/2 cup, 1 tsp. soy sauce, 1/4 tsp. white vinegar.
How to Proceed - Heat oil in a pan, stir-fry vegetables to a crunchy texture by adding little salt. Slowly add coconut milk, sugar, vinegar, soy sauce - mix well to combine. Finally add grinded green curry paste and finely chopped coriander leaves - simmer for 10 minutes and serve hot with plain rice.
