This is my modified version of veggie wrap using Wholegrain Barley Wraps filled with mixed beans, hint of Indian herbs & spices - grilled sides to nice & crispy.
This is a type of sandwich made with a soft flat bread rolled around a filling. The usual flat breads are wheat flour pita, tortillas & lavash (in Kashmir it is known as "lavase" which is one of the basic bread product Kashmiri people consume on a regular basis for their breakfast) and the filling usually consist of a variety of raw or grilled vegetables of choice (for a healthy vegetarian or vegan version) and meat, poultry or fish products (for a non-vegetarian version).
INGREDIENTS
1/2
cup each of - moong beans, channa, rajma beans, broad beans, dry
peas, black eye beans, raw peanuts (hesarukalu, kadale, kidney beans, hasi
batani, halasandikalu, kadlekaibeeja) - washed, soaked overnight, pressue
cooked until tender
A
pack of wholegrain Barley wraps
1 large red onion & few green chillies - sliced
lengthwise
EXTRA
CONDIMENTS - salt, pepper, green chilli, tomato, Barbecue sauces,
lemon juice, mint & coriander chutney
FOR
SEASONING - 2 tsp. olive oil, pinch of turmeric & hing powders,
1/2 tsp. each - mustard seeds, cumin seeds, chana & urud dals)
FOR
GARNISHING - 1/2 tsp. each - chopped fresh coriander leaves & dry
methi leaves
Method
Heat oil in a
pan, season using
seasoning ingredients.
Fry
onions & chillies, add
cooked mixed beans - fry for few minutes by adding lemon juice, salt,
pepper.
Garnish with coriander
& methi leaves. Remove from heat and allow it to cool.
On a flat surface - keep barley wraps, spread with mint & coriander
chutney, fill with prepared
mixed beans in the centre, add
salt, pepper, chilli, tomato & Barbecue sauces, fold
3 sides (bottom first then 2 sides)
Place them on to a grill or skillet (may be lightly brushed with olive oil),
lightly brown both sides
to nice & crispy
Serve / enjoy!
