BURMESE Noodles Khow Suey

Khow Suey is a noodle dish originated in Burma, from the region of mountainous Shan State; came to East India with Indians who migrated from Burma during World War II.   Here is my recipe for modified Vegetarian - dry version using simple ingredients.


Ingredients 


  • 1 cup mixed vegetables (cabbage, carrot, beans)
  • 1 cup cooked rice noodles

Ingredients for Khow Suey Sauce
  • 1/2 sliced onion
  • ginger & garlic (small pieces)
  • 2 tsp. each - chana dal, coriander seeds, cumin seeds (roasted)
  • fresh or dry red chillies to taste
  • 1 cup coconut milk
  • pinch of sugar
  • salt to taste
  • 2 tsp. cooking oil
  • 5 tsps. lemon juice

Method

 
 

Heat oil and fry vegetables until tender
Grind - roasted chana dal, coriander & cumin seeds, ginger, garlic, red chillies to smooth paste
 Fry grinded paste for 5 minutes with cooked vegetables
Add coconut milk, sugar, salt, lemon juice - mix well to combine
Simmer for few minutes, remove from heat
Add cooked noodles to the sauce just before serving
