Spring Onion Pulav





Ingredients

1 bunch chopped spring onions (for frying + 3 tsp. for garnishing)
2 cup cooked basmati rice (washed & soaked for 30 mins)
4 tsp. ghee
2 tsp. oil
salt to taste
ginger-garlic-green chillies to taste
lemon juice to taste
1 pulav leave (for flavour)
1 1/2 tsp. cumin seeds (for seasoning)
2 tsp. each - garam masala powder, pulav powder & green chilli sauce)
1 tsp. each -  cumin powder, coriander powder, clove powder, cinnamon powder, cardamom powder (roasted and powdered)

Method



In a large pan,  heat ghee & oil, season cumin seeds,
add chopped green chillies, ginger & garlic - fry for few minutes,
add chopped spring onions (save 3 tsp. spring onions for garnishing at the end) fry for few minutes,add rice and enough water to cook rice, close the lid and cook rice until tender,add other ingredients, mix well to combine - cook for few more minutes,remove from heat, garnish with 3 tsp. chopped spring onions on top - serve hot with radish raita
