ASIAN - Vegetarian Laksa
LAKSA - a very popular spicy noodle soup; is a combination of Malay & Chinese cuisine - also found in Singapore, Thailand & Indonesia. The main ingredients are rice vermicelli, coconut milk & curry powder / paste.
INGREDIENTS
3 cup cooked noodles
2 cup cooked vegetables of your choice
(carrots, cabbage, beans, corn, broccoli etc.,)
300 gms Tofu cubes
4 cup vegetable stock
500 ml coconut milk
2 tsp. each of fresh mint & coriander leaves chopped
4 tsp. sesame oil
1/2 cup chopped onions
ginger & garlic to taste
salt to taste
4 tsps. Lemon juice
crushed dry red chillies to taste
Asian Laksa paste to taste
(any brand WITHOUT SHRIMP which is a seafood and not suitable for Vegetarians)
Heat sesame oil in a pan, fry onions, ginger & garlic |
Add chopped vegetables, cook until just tender |
Add other ingredients (except Tofu), simmer for 10 minutes Remove from heat, add Tofu and mix well to combine |
Pour this Laksa soup to serving bowl with noodles Serve & Enjoy! |
