ASIAN - Vegetarian Laksa


LAKSA -  a very popular spicy noodle soup; is a combination of Malay & Chinese cuisine - also found in Singapore, Thailand & Indonesia.  The main ingredients are rice vermicelli, coconut milk & curry powder / paste.

 

 INGREDIENTS

3 cup cooked noodles
2 cup cooked vegetables of your choice 
(carrots, cabbage, beans, corn, broccoli etc.,)
300 gms Tofu cubes
4 cup vegetable stock
500 ml coconut milk
2 tsp. each of fresh mint & coriander leaves chopped
4 tsp. sesame oil
1/2 cup chopped onions
 ginger & garlic to taste
salt to taste
4 tsps. Lemon juice
crushed dry red chillies to taste
Asian Laksa paste to taste 
(any brand WITHOUT SHRIMP which is a seafood and not suitable for Vegetarians)

Method

Cook noodles as per packet instructions, drain, cool, divide equally among serving bowls
Heat sesame oil in a pan, fry onions, ginger & garlic
Add chopped vegetables, cook until just tender
 
Add other ingredients (except Tofu), simmer for 10 minutes
Remove from heat, add Tofu and mix well to combine
Pour this Laksa soup to serving bowl with noodles
Serve & Enjoy!
