Bombay Saagu


This recipe tastes different to the one which I have blogged earlier for Bangalore special Saagu varieties.  (http://veggierasoi.blogspot.com.au/2012/08/bengaluru-special-saagu-varieties.html).


For Bombay Saagu

Main Ingredients

6 boiled potatoes
1 large finely chopped onion
2 chopped tomatoes
3/4 cup cooked green peas
salt to taste
1/2 tsp. chopped coriander leaves for garnishing

Ingredients for Seasoning

2 tsp. oil
1/2 tsp. mustard seeds
1/4 tsp. methi seeds (fenugreek)
1/2 tsp. jeera seeds (cumin)
pinch of turmeric powder
pinch of hing
few curry leaves

Ingredients for Grinding

2 tsp. roasted coriander seeds
dry red chillies to taste
fresh green chillies to taste
1/2 tsp. freshly grated ginger
2 tsp. sugar
2 tsp. fresh lemon juice

Method
  1. Cut potatoes into half, boil them until tender, remove the skin when cool
  2. cook green peas until tender
  3. Heat oil in a pan, season with seasoning ingredients
  4.  Add onions, tomatoes and cook until onions are transparent and tomatoes are cooked
  5. Grind the ingredients to smooth paste which are mentioned above for grinding
  6. Pour the grinded mixture, salt, cooked potatoes & peas to the pan, mix well to combine
  7. simmer this Saagu for few minutes
  8. Serve hot with Puri or Bathura
