Bombay Saagu
This recipe tastes different to the one which I have blogged earlier for Bangalore special Saagu varieties. (http://veggierasoi.blogspot.com.au/2012/08/bengaluru-special-saagu-varieties.html).
For Bombay Saagu
Main Ingredients
6 boiled potatoes
1 large finely chopped onion
2 chopped tomatoes
3/4 cup cooked green peas
salt to taste
1/2 tsp. chopped coriander leaves for garnishing
Ingredients for Seasoning
2 tsp. oil
1/2 tsp. mustard seeds
1/4 tsp. methi seeds (fenugreek)
1/2 tsp. jeera seeds (cumin)
pinch of turmeric powder
pinch of hing
few curry leaves
Ingredients for Grinding
2 tsp. roasted coriander seeds
dry red chillies to taste
fresh green chillies to taste
1/2 tsp. freshly grated ginger
2 tsp. sugar
2 tsp. fresh lemon juice
Method
- Cut potatoes into half, boil them until tender, remove the skin when cool
- cook green peas until tender
- Heat oil in a pan, season with seasoning ingredients
- Add onions, tomatoes and cook until onions are transparent and tomatoes are cooked
- Grind the ingredients to smooth paste which are mentioned above for grinding
- Pour the grinded mixture, salt, cooked potatoes & peas to the pan, mix well to combine
- simmer this Saagu for few minutes
- Serve hot with Puri or Bathura
