Stir Fried Vegetables & Tofu Curry
Ingredients for Chinese 5 spice powder (home-made) - dry roasted and blended into powder.
- 6 star anise
- 2 tsp. fennel seeds
- 1 stick cinnamon
- 1/2 tsp. cloves
- 1 tsp. peppercorns
- hot Madras curry powder to taste
- Chinese 5 spice powder to taste
- pinch of turmeric powder
- hot red chilli powder to taste
- 1-2 tsps. of ginger & garlic powders
Other Ingredients for making curry
- 2 cup cut vegetables - onion, carrot, beans, cauliflower, broccoli
- 300gms - Tofu (firm texture used to avoid breaking of tofu while cooking)
- 2 tsp. each of olive & sesame oil
- small piece of fresh ginger (chopped)
- 4-5 fresh garlic pods (optional)
- salt & pepper to taste
- 1 tsp. brown sugar
- 1 tsp. lemon juice
- 2 tsp. soy sauce
- 2 tsp. coconut powder
- 1/4 tsp. white vinegar
- 2 tsp. corn flour
