Stir Fried Vegetables & Tofu Curry





Ingredients for Chinese 5 spice powder (home-made) -  dry roasted and blended into powder.
  • 6 star anise
  • 2 tsp. fennel seeds
  • 1 stick cinnamon
  • 1/2 tsp. cloves
  • 1 tsp. peppercorns
Ingredients for Chinese Curry Paste (home-made) - below ingredients mixed together to form a smooth paste
  • hot Madras curry powder to taste
  • Chinese 5 spice powder to taste
  • pinch of turmeric powder
  • hot red chilli powder to taste
  • 1-2 tsps. of ginger & garlic powders


Other Ingredients for making curry
  • 2 cup cut vegetables - onion, carrot, beans, cauliflower, broccoli
  • 300gms - Tofu (firm texture used to avoid breaking of tofu while cooking)
  • 2 tsp. each of olive & sesame oil
  • small piece of fresh ginger (chopped)
  • 4-5 fresh garlic pods (optional)
  • salt & pepper to taste
  • 1 tsp. brown sugar
  • 1 tsp. lemon juice
  • 2 tsp. soy sauce
  • 2 tsp. coconut powder
  • 1/4 tsp. white vinegar
  • 2 tsp. corn flour
Method - In a large wok heat oil, fry chopped onions, ginger, garlic.  Add other vegetables and stir-fry until tender.  In a separate small bowl, add corn flour, sugar, lemon juice, vinegar, soy sauce, pepper powder and make a smooth paste.  To this add Chinese curry paste which you prepared earlier (recipe above).  Add this mixture to the cooked vegetables, add tofu (can be toasted lightly before adding here with other ingredients), salt to taste - mix everything well to combine, simmer for few minutes and serve hot with plain rice.
