KERALA - AVIYAL
AVIYAL - a common vegetable dish in Kerala, Tamilnadu & Udupi state in Karnataka. Mixed vegetables are cooked in coconut & plain yogurt (curd) and seasoned with coconut oil, mustard seeds & curry leaves.
Ingredients:
- 2-3 cups of vegetables of your choice (beans, carrot, potato, drumsticks, eggplant, raw banana etc.,)
- ½ cup grated coconut,
- 1 tsp jeera (cumin seeds)
- 1 tsp raw rice – washed and soaked for few mins (for gravy thickness - optional)
- green chillies to taste
- salt to taste
- 1 cup plain yogurt
- For seasoning - 3-4 tsps. of coconut oil, 1/4 tsp mustard seeds & few curry leaves
Method:
- Cut vegetables lengthwise and pressure cook for just 1 whistle
- Grind cumin seeds, soaked rice, coconut & green chillies into smooth paste
- Heat a pan, season with seasoning ingredients
- Add cooked vegetables, salt, grinded spice mixture, plain yogurt - mix well to combine, simmer for few minutes
- Can be served with idli, dosa, chapati or plain rice
