ITALIAN - Puff Pastry Pizza




LAYERED Puff Pastry Pizza - 3 puff pastry sheets (thawed), 1 cup vegetables of choice, 4 tbsp. sauce (roasted vegetables in sauce), 1/2 cup cheese, salt, pepper & Italian seasoning.



METHOD -  Place pastry sheets on to a baking tray, turn up edges to form a border (1cm).  Evenly spread sauce, top with vegetables, season with salt, pepper, Italian seasoning, sprinkle with cheese.  Bake at 200 deg. C for 20 mins (until golden and puffed).




Olive Dip Pizza


Ingredients & Method (makes 4 servings)
  • 2 sheets frozen puff pastry
  • Vegetable of your choice ( tomato, carrots, olives etc.,) finely chopped
  • 2 tbs fresh basil leaves
  • 4 tbs (1/3 cup) olive dip 

Preheat baking tray in the oven at 220°C.

Remove pastry from the freezer to thaw slightly while you prepare the toppings. Slice or chop vegetables into small pieces.

Halve the pastry sheets and fold in the sides of each piece to make a 5mm border. Place on sheets of baking paper, then spread with olive dip. Top with vegetables. Remove trays from oven and place baking paper with pizzas onto the hot trays. Bake for 12 minutes or until puffed and golden.
