ITALIAN - Bruschetta
Bruschetta - an antipasto from Italy whose origin dates back to the 15th century. It consists of grilled bread rubbed with garlic, topped with olive oil, salt and pepper. Variations may include toppings of tomato, red onions, grilled vegetables, beans, cheese. Bruschetta is usually served as a snack or appetizer.
Ingredients & Method
- 4-6 diced tomatoes
- Mixture of white, red & green onions, finely diced
- Vegetable variations - capsicum, mushrooms
- 4 tbsp. olive oil
- splash of vinegar (apple cider, white or balsamic)
- salt & cracked pepper to taste
- ½ cup basil, fresh or dry leaves
- Slices of Italian bread
- Fresh garlic for rubbing
- In a pan, add olive oil, vinegar, salt, pepper, basil, vegetables – mix well to combine. Warm this on a low flame for 2-3 minutes.
- Char bread on both sides by applying little olive oil. Remove from heat, rub garlic while the bread slice is still warm, top with warmed vegetable mixture, sprinkle with extra cracked pepper & basil leaves (optional). Serve immediately.
