Phulkas
Best served warm with any Indian curry |
Phulkas (oil-free Indian puffy bread)
Ingredients
- 2 cup whole wheat flour
- salt to taste
- 1 tsp. sugar
- extra flour for dusting
- enough milk to make dough
- pan & metal mesh for making Phulkas
Method
- In a large bowl, add flour, salt & sugar, and make a soft dough using milk (I haven't added any water in this recipe). Rest this dough for 2 hours
- Pull out lemon sized balls from the dough and roll into round shapes
- Pre-heat a pan and roast on one side by allowing it to raise a little (don't use oil for roasting)
- remove from pan and place directly on to pre-heated metal mesh and roast the other side and allow it to puff (like puris)
- remove from heat and place the hot phulkas covered in kitchen towel or aluminium foil until you serve
