Stir-Fried Cabbage

Excellent source of natural antioxidant, Vitamin C, Vitamin B-1, B-5 & B-6 (essential vitamins as human body requires them from external sources to replenish, Vitamin K required in human body for healthy bones and has established role in curing Alzheimer's disease patients by limiting neuronal damage in their brain.
Here is my modified version of the recipe for Stir-fried Cabbage:-
Ingredients
- 1/2 of shredded cabbage
- 2 carrots cut into small pieces
- 1/4 cup chana dal (soaked for 1/2 hour)
- 1 tsp. each of coconut powder & corn flour
- Fresh red & green chillies (coarsely grinded)
- salt to taste
- Pinch of Ajinomoto (Chinese salt)
- 1 tsp. freshly grated ginger
- 2 tsps. each of rice vinegar & soy sauce
- 2 tsp. peanut butter
- 3 tsps. of sesame oil or peanut oil
- 2 generous spoons of toasted sesame seeds (for garnishing on top)
Method
- Soak chana dal for 20-30 minutes, drain and keep it aside
- Lightly toast sesame seeds and keep it aside
- Heat peanut or sesame oil in a frying pan, toss chopped carrots & cabbage until tender but maintain the crispiness
- Slowly add other ingredients and salt, mix well to combine
- Garnish with toasted sesame seeds on top and serve hot
- Can be served with rice or hot pulkas (fat-free Indian flat bread)
