Baked Custard




Ingredients
  • 3 cup thick cream
  • 1/2 cup sugar (more or less to your taste)
  • 1 tsp. vanilla extract
  • 4 tsps. custard powder
  • pinch of ginger powder for garnishing on top
Method
  • In a sauce pan, on medium heat, add cream and custard powder and simmer, stirring often.  Remove from heat and allow it to set for 10 minutes
  • In a bowl, combine sugar, vanilla extract and beat until sugar is dissolved.  Add prepared cream mixture a little at a time until everything is combined
  • Pour this mixture into custard cups and sprinkle with ginger powder on top

BEFORE BAKING FOLLOW THESE STEPS:-
  • In a deep baking pan, pour hot water to come half-way up to the sides of custard cups in order to protect custard burning from heat
  • Bake at 180 deg. C for 20 - 30 minutes or until custard is set around the edges but still loose in the centre when shaken
  • At this stage, remove from oven and immediately remove custard cups from hot water baking pan and place them on wire rack until room temperature
  • Cover with plastic wrap and refrigerate for 2-3 hours.  Can be served chilled
