THAI | FRIED RICE



Ingredients
  • 2 cup cooked rice (rice cooked in vegetable stock & coconut milk)
  • 1 cup vegetables (red bell pepper, carrot, beans) chopped lengthwise
  • 1/2 bunch shallots (green onions) chopped 
  • 1/2 cup pineapple chunks
  • 1/4 cup cashews (roasted)
  • salt & pepper to taste
  • 3-4 tsps. soy sauce
  • Sesame oil (as needed)
  • 4-5 tsps. Thai curry paste (for homemade - dry red chillies, fresh red chillies, lemon grass, galangal, turmeric powder, garlic & onions are grinded into smooth paste)
Method
  • Cook rice using coconut milk & vegetable stock and spread in a large bowl for cooling (every grain should be separate)
  • In a large wok, heat sesame oil and fry vegetables until tender or crispy
  • Add cashews & shallots and fry for few minutes
  • Add grinded Thai curry paste, salt & pepper - mix well to combine, fry for few minutes
  • then add cooked & cooled rice and mix well
  • Serve hot with few cucumber & tomato slices..... enjoy!
