THAI | FRIED RICE
Ingredients
- 2 cup cooked rice (rice cooked in vegetable stock & coconut milk)
- 1 cup vegetables (red bell pepper, carrot, beans) chopped lengthwise
- 1/2 bunch shallots (green onions) chopped
- 1/2 cup pineapple chunks
- 1/4 cup cashews (roasted)
- salt & pepper to taste
- 3-4 tsps. soy sauce
- Sesame oil (as needed)
- 4-5 tsps. Thai curry paste (for homemade - dry red chillies, fresh red chillies, lemon grass, galangal, turmeric powder, garlic & onions are grinded into smooth paste)
- Cook rice using coconut milk & vegetable stock and spread in a large bowl for cooling (every grain should be separate)
- In a large wok, heat sesame oil and fry vegetables until tender or crispy
- Add cashews & shallots and fry for few minutes
- Add grinded Thai curry paste, salt & pepper - mix well to combine, fry for few minutes
- then add cooked & cooled rice and mix well
- Serve hot with few cucumber & tomato slices..... enjoy!
