ASIAN Spicy Snake Beans Curry




SNAKE BEANS / LONG BEANS / CHINESE YARD LONG BEANS  is an Asian vegetable and commonly used in Indian, Sri Lankan & Chinese cooking available to buy at Asian Markets if you are living overseas.   There are different versions of making curries using this vegetable and here is my modified version & dal or lentil free recipe using Sri Lankan, Chinese & Indian methods.




Ingredients
  • 2-3 cups snake beans - cut into lengthwise
  • 1 each of onion & tomato - sliced
  • 3-4 potatoes - skin peeled and cut into bite size cubes
  • 1-2 tsps. each of - mustard seeds, cumin seeds, ginger powder, turmeric powder, methi powder (fenugreek), coriander powder
  • salt & hing powder to taste
  • tamarind juice to taste
  • 1/2 - 1 tsp. sugar
  • red hot chilli powder, red chilli flakes,  curry powder, sabzi masala to taste
  • 2-3 tsps. of coconut oil
  • 1 tsp. clarified butter (ghee)
  • 1/2 cup coconut milk
  • 1-2 cups plain yogurt

Method
  • Pressure cook snake beans & potatoes until tender
  • Heat coconut oil in a pan, season with mustard & cumin seeds
  • Fry onions & tomatoes until cooked, add cooked snake beans & potatoes
  • Add all the spice ingredients, mix well to combine
  • Add salt, yogurt & coconut milk - simmer for few minutes or till sauce thickens
  • Serve hot with plain rice
