ASIAN Spicy Snake Beans Curry
SNAKE BEANS / LONG BEANS / CHINESE YARD LONG BEANS is an Asian vegetable and commonly used in Indian, Sri Lankan & Chinese cooking available to buy at Asian Markets if you are living overseas. There are different versions of making curries using this vegetable and here is my modified version & dal or lentil free recipe using Sri Lankan, Chinese & Indian methods.
Ingredients
- 2-3 cups snake beans - cut into lengthwise
- 1 each of onion & tomato - sliced
- 3-4 potatoes - skin peeled and cut into bite size cubes
- 1-2 tsps. each of - mustard seeds, cumin seeds, ginger powder, turmeric powder, methi powder (fenugreek), coriander powder
- salt & hing powder to taste
- tamarind juice to taste
- 1/2 - 1 tsp. sugar
- red hot chilli powder, red chilli flakes, curry powder, sabzi masala to taste
- 2-3 tsps. of coconut oil
- 1 tsp. clarified butter (ghee)
- 1/2 cup coconut milk
- 1-2 cups plain yogurt
Method
- Pressure cook snake beans & potatoes until tender
- Heat coconut oil in a pan, season with mustard & cumin seeds
- Fry onions & tomatoes until cooked, add cooked snake beans & potatoes
- Add all the spice ingredients, mix well to combine
- Add salt, yogurt & coconut milk - simmer for few minutes or till sauce thickens
- Serve hot with plain rice
