MEXICAN Nachos
NACHOS or TOTOPOS are a popular food of Mexican origin, which are either made quickly to serve as a snack or prepared with more ingredients to serve as a meal. There are many different versions of preparing this dish and this is how it is prepared in my kitchen.
INGREDIENTS FOR MAKING NACHOS
- 1 pack of corn chips
- 1 cup grated cheese
- 1 - 2 cups cooked red kidney beans (lightly salted & spiced for flavour)
- sour cream to serve
- tomato salsa to serve
- Guacamole (Avocado dip) to serve
FOR HOME MADE GUACAMOLE (AVOCADO DIP) - in a bowl, combine 1-2 lightly mashed avocado, lemon juice, salt & pepper to taste
METHOD
- In a baking dish, arrange corn chips to cover the base
- sprinkle with grated cheese to cover
- spoon over kidney beans mixture
- repeat with remaining corn chips, cheese & beans mixture to make second layer
- bake in a pre-heated oven @ 180 deg. C for about 10 minutes or until cheese is melted and chips are crisp
- serve with a dollop of sour cream, Avocado dip & tomato salsa
