ITALIAN Antipasto - Grilled Vegetables

  • Mixed Vegetables -  broccoli, cauliflower, red onions, eggplant, green capsicum, potatoes, carrots
  • olive oil as needed
  • salt & pepper to taste
  • balsamic vinegar to taste
  • parsley, basil & oregano for finishing

Prep: 10 mins
Marinade: 30 mins
Grilling: 40 mins
Yields: 5 servings

  • Cut vegetables into lengthwise or bite size pieces
  • prepare olive oil mixture by adding salt, pepper, parsley, basil, oregano & balsamic vinegar dressing
  • Mix vegetables with this olive oil mixture and leave it for 30 minutes
  • Cook in a preheated Grill until tender & cooked nicely (@ 200 deg C for about 40 minutes)
  • Serve as an appetizer or main meal
