GUJARATI Kadhi






INGREDIENTS
  • 1/4 cup - moong dal
  • 1/2 cup - vegetables of your choice ( in this recipe, I have just used shredded cabbage)
  • 2 tsp. besan flour
  • 1 1/2 cup plain curd (yogurt)
  • 1 tsp. sugar or jaggary
  • 2 tsp. oil & ghee (clarified butter)
  • salt to taste
  • Pinch of hing powder
  • Pinch of turmeric powder
  • For seasoning - 1 tsp. each of mustard & cumin seeds, curry leaves are used
  • 1-1 1/2 tsps. each of - red chilli flakes, coriander powder, methi powder, ginger powder (or freshly grated ginger can be used), clove powder & cinnamon powder
  • Chopped coriander leaves for garnishing



METHOD
  • Pressure cook moong dal & vegetables until tender
  • Heat oil & ghee in a pan, season with hing, mustard seeds, cumin seeds & curry leaves
  • In a separate bowl add besan flour & curd & mix well into a smooth paste & add this with other ingredients, cooked dal & vegetables to the seasoned mixture, add chopped coriander leaves
  • Simmer on a medium flame and serve hot with rice
