GUJARATI Kadhi
INGREDIENTS
- 1/4 cup - moong dal
- 1/2 cup - vegetables of your choice ( in this recipe, I have just used shredded cabbage)
- 2 tsp. besan flour
- 1 1/2 cup plain curd (yogurt)
- 1 tsp. sugar or jaggary
- 2 tsp. oil & ghee (clarified butter)
- salt to taste
- Pinch of hing powder
- Pinch of turmeric powder
- For seasoning - 1 tsp. each of mustard & cumin seeds, curry leaves are used
- 1-1 1/2 tsps. each of - red chilli flakes, coriander powder, methi powder, ginger powder (or freshly grated ginger can be used), clove powder & cinnamon powder
- Chopped coriander leaves for garnishing
METHOD
- Pressure cook moong dal & vegetables until tender
- Heat oil & ghee in a pan, season with hing, mustard seeds, cumin seeds & curry leaves
- In a separate bowl add besan flour & curd & mix well into a smooth paste & add this with other ingredients, cooked dal & vegetables to the seasoned mixture, add chopped coriander leaves
- Simmer on a medium flame and serve hot with rice
