BANGALORE Iyengar Bakery -Savoury Bread




(FOR YEAST-FREE VERSION = Equal quantity of wheat &  all-purpose flour,  1/2 tsp. each baking powder & baking soda, salt to taste, equal quantity of water & butter milk - combined together to make dough) 



Ingredients
  • 1 3/4 cup - wheat flour
  • 2 cup - plain flour
  • 1 sachet (7gms) yeast
  • 2 tsp. sugar (optional)
  • salt to taste
  • finely chopped green chillies to taste
  • handful of finely chopped coriander leaves
  • 1 tsp. sesame seeds to garnish on top (optional) before baking
  • 2 tsp. melted butter
  • Oil for greasing
  • 1 cup milk
  • water as required

Method
  • Warm milk & water in a sauce pan (or microwave), add melted butter and yeast, mix well and leave this mixture for 10-15 minutes
  • In a large bowl, add 2 flours, salt, chillies, coriander, sugar (if using) and the above yeast mixture, make a soft dough
  • Let the dough to rest in a greased bowl, covered in a warm place for about 45 minutes
  • Grease a bread loaf pan with little bit of oil or butter, place the rested dough in the loaf pan, sprinkle with sesame seeds, brush with butter & allow it to rest again for another 45 minutes
  • Bake @ 180-200 deg. C for approximately 45 minutes or until done
  • Remove from the oven, allow it to cool, slice and serve
