TURKISH Gözleme




Gözleme is a savoury traditional Turkish handmade and hand-rolled Pastry. Fresh pastry is rolled out, filled and sealed, then cooked over a griddle.  For making Vegetarian Gözleme -  Spinach and Feta Cheese, potatoes, pumpkins, mushrooms can be used.

Recently I tried this Turkish cuisine during my visit to a local street-side festival and got to know the method of preparing this delicious dish and & here is the recipe.

  
Ingredients for the Dough
  •  3 cup plain flour or all-purpose flour (used for bread making)
  •  Salt to taste
  •  1 tsp. sugar
  •  2 tsp. olive oil
  •  Water to make dough (thick & soft dough)
  • Lemon wedges, to serve

 For Filling I used

  •  160 gms spinach leaves (lightly cooked)
  •  200 gms crumbled feta cheese
  •  Salt & pepper to taste

    Method

    Make a thick & soft dough using all the dough ingredients.  Knead well, wrap & leave it for resting (for 8-10 hours).  Divide the dough into equal pieces, make balls, roll it on a floured surface into big circle or square.  Add a spoonful of filling in the centre, fold the circle or square completely, press sides slightly to seal.

     

    Put this flat bread on the pre-heated griddle, apply oil, cook both sides until golden & crisp.

     

    Remove to a serving plate, cut Gözleme into quarters & serve with lemon wedges.
