AUSTRALIAN Banana Pikelets



PIKELET is a stage name of Australian Musician Evelyn Morris  and Pikelets are (similar to pancakes or crumpets) popular in both Australia & New Zealand.   Here is my modified NO egg/egg-less/egg-free recipe for this delicious Australian Dessert.

Ingredients

  • 1 cup self-raising flour (or Maida flour can be used)
  • Pinch of baking soda or baking powder
  • sugar to taste
  • 1/4 tsp. almond extract
  • 3/4 cup milk
  • 1 ripe banana (mashed)
  • oil or butter for making pikelets
  • Can be served with Ice-cream, Custard, Jam or Whipped Cream
Method
 









  • In a large bowl, add flour, , extract, sugar, milk & mashed banana; mix well until smooth (batter consistency)
  • Heat a pan, drizzle with oil or melted butter, drop a tablespoon (for baby pikelets) of batter into the pan.  Cook for a minute or two or until bubbles appear on the surface. Turn and cook for a further minute or until golden brown and cooked through.  
  • Repeat the procedure with the remaining batter to make more pikelets
  • Transfer to a plate and serve with jam, whipped cream, ice-cream or custard
