RUSSIAN Veggie Stroganov
Stroganov or Stroganoff is a 19th century Russian dish which has become popular around the world, with considerable variation from the original recipe. This is my VEGETARIAN
version where mixed vegetables such as potatoes, cauliflower, cabbage,
tomatoes & onions are sautéed & cooked with sour cream, herbs
& spices and served with rice, pasta or noodles.
Ingredients
- 1 Potato - cut into bite sized cubes
- 1/4 cup Cauliflower florets
- 1/2 cup shredded cabbage
- 1 tomato - chopped
- 1 onion - sliced lengthwise
- 1/4 cup Mushrooms - sliced (OPTIONAL)
- 2 tsps. each of olive oil & butter
- 2 tsp. corn flour
- 1 cup sour cream
- 1/2 tsp. parsley (dry or fresh can be used, if using fresh leaves - chop and cook until tender)
- 1/2 tsp. nutmeg powder
- 1/4 cup vegetable stock
- 1/4 tsp. each of lemon juice & white vinegar
- Crushed red chilli flakes, salt & white pepper powder to taste
Method
- Heat oil & butter in a pan, fry onions until golden brown
- Add tomatoes & fry for few minutes (not mushy)
- Fry other vegetables until tender
- In a bowl, add corn flour, nutmeg powder, lemon juice, vinegar, vegetable stock and make a smooth paste. Add this to cooked vegetables, mix well and simmer on low flame
- After 5 mins add sour cream, chilli flakes, salt & pepper, mix well to combine. Simmer for 5-10 mins and remove from heat
- Serve hot with plain cooked rice, pasta or noodles
