PHILIPPINE Chow Mein - Pancit Canton





Ingredients (Serves 4 people)
  • 2 packet dry Noodles (225 gms each)
  • 850 gms cut mixed vegetables (green beans, broccoli, carrot, capsicum, baby corn)
  • 1/4 cup shredded cabbage
  • 1 sliced onion
  • Ginger paste
  • Garlic paste (optional)
  • Chinese salt (Ajinomoto)
  • Salt & pepper to taste
  • Green chilli paste to taste
  • 1 tsp. soy sauce
  • 1 tsp. corn starch
  • 4 tsp. sesame oil
  • Chopped coriander & spring onions for garnishing






Method
  • In a large pan, boil water, add noodles and cook just enough to soften.  Wash in cold water, keep it aside.
  • In a separate pan, heat oil, fry onions (along with ginger & garlic)until golden brown, fry shredded cabbage, add other sliced/cut vegetables - fry until tender (but maintain the crispiness)
  • Add other spice ingredients (including corn starch), mix well and fry for few more minutes
  • Add cooked noodles and mix well
  • Remove from heat, place in serving bowls, garnish on top with chopped coriander & spring onions.
