PHILIPPINE Chow Mein - Pancit Canton
Ingredients (Serves 4 people)
- 2 packet dry Noodles (225 gms each)
- 850 gms cut mixed vegetables (green beans, broccoli, carrot, capsicum, baby corn)
- 1/4 cup shredded cabbage
- 1 sliced onion
- Ginger paste
- Garlic paste (optional)
- Chinese salt (Ajinomoto)
- Salt & pepper to taste
- Green chilli paste to taste
- 1 tsp. soy sauce
- 1 tsp. corn starch
- 4 tsp. sesame oil
- Chopped coriander & spring onions for garnishing
- In a large pan, boil water, add noodles and cook just enough to soften. Wash in cold water, keep it aside.
- In a separate pan, heat oil, fry onions (along with ginger & garlic)until golden brown, fry shredded cabbage, add other sliced/cut vegetables - fry until tender (but maintain the crispiness)
- Add other spice ingredients (including corn starch), mix well and fry for few more minutes
- Add cooked noodles and mix well
- Remove from heat, place in serving bowls, garnish on top with chopped coriander & spring onions.
