Lemon-Coconut Tart





 Ingredients
  • 1/2 cup plain flour
  • 1 cup caster sugar
  • 1 cup desiccated coconut
  • 1 2/3 cup milk
  • 125 gms melted butter
  • 1 tsp. grated lemon zest
  • 2 tsps. lemon juice 
Method
  • Lightly grease tart dish or line with baking paper
  • preheat oven to 180 deg. C
  • In a large bowl, mix all the ingredients until smooth
  • Pour the mixture in each tart dish and bake for about 45 minutes OR until done
  • Remove from oven, place them on cooling rack or a plate 
  • Allow them to cool and dust with icing sugar on the top
  • Can be served warm or cold with whipped cream or ice-cream
