Lemon-Coconut Tart
Ingredients
- 1/2 cup plain flour
- 1 cup caster sugar
- 1 cup desiccated coconut
- 1 2/3 cup milk
- 125 gms melted butter
- 1 tsp. grated lemon zest
- 2 tsps. lemon juice
Method
- Lightly grease tart dish or line with baking paper
- preheat oven to 180 deg. C
- In a large bowl, mix all the ingredients until smooth
- Pour the mixture in each tart dish and bake for about 45 minutes OR until done
- Remove from oven, place them on cooling rack or a plate
- Allow them to cool and dust with icing sugar on the top
- Can be served warm or cold with whipped cream or ice-cream
