INDIAN - KULFI
KULFI - Milk based dense & frozen Indian Dessert originating in the Indian sub-continent. It's a traditional Indian ice-cream widely popular throughout the globe. It comes in different flavours but more traditional ones are - mango, pistachio, rose, kesar and cardamom
- 1/2 kg Alphonso Mango Pulp
- 500 ml thickened cream
- 397 gms (tin) - condensed milk
- pinch of saffron
- 2 tablespoon each - corn & rice flours
- 1 tablespoon cardamom powder
- 1 tablespoon each - grounded almond meal, hazelnut meal & badam powders
- 100ml Mango-Passion fruit topping (optional)
- Few tablespoons - whipped cream (optional)
- Few tablespoons of chopped almonds & pistachios

- Cook above ingredients on low heat till thick consistency.
- When cool, pour the Kulfi mixture into serving bowls, garnish with chopped pistachios & almonds.
- Cover and freeze until set (approximately 7-8 hours).
- Serve cold.
Ingredients:
- 4 cup milk
- Sugar to taste
- 1 tsp. each of corn starch & whipped cream
- 1 slice bread (crust removed, cut into small pieces)
- ½ tsp. cardamom powder
- 1 tsp. each of finely grounded pistachios & almonds
Method:
- Boil milk, lower heat, add sugar and cook milk until it has thickened
- Blend other ingredients together into a smooth paste & add to the cooked milk, mix well, allow the mixture to cool
- Pour the mixture into ice cube trays or baking dish, cover with plastic wrap
- Freeze until set (approximately 7-8 hours)
- Serve chilled
