INDIAN Eggplant & Zucchini Fritters

Ingredients 
  • 1 large eggplant, sliced round
  • 1 zucchini, sliced round
  • 1 cup besan flour
  • 1/2 cup rice flour
  • pinch of turmeric powder
  • pinch of cooking soda
  • salt & red chilli powders to taste
  • oil for deep frying


Method
  • Heat oil in a pan
  • Mix all the ingredients (except vegetables) into a batter (idli / dosa batter consistency)
  • Dip each vegetable slice and deep fry both sides until done
  • Serve hot with a cup of coffee or tea
