INDIAN Eggplant & Zucchini Fritters

Ingredients
- 1 large eggplant, sliced round
- 1 zucchini, sliced round
- 1 cup besan flour
- 1/2 cup rice flour
- pinch of turmeric powder
- pinch of cooking soda
- salt & red chilli powders to taste
- oil for deep frying
Method
- Heat oil in a pan
- Mix all the ingredients (except vegetables) into a batter (idli / dosa batter consistency)
- Dip each vegetable slice and deep fry both sides until done
- Serve hot with a cup of coffee or tea
