Red Lentil Soup




Ingredients: 
  • 1 cup red lentil
  • 3-4 cups water (or to your required soup consistency)
  • 1 spoon ginger paste (garlic may be added)
  • 1 onion finely chopped
  • 2 spoon finely chopped coriander leaves
  • 1 spoon each of mustard & cumin seeds (for seasoning)
  • pinch of turmeric powder
  • 1 spoon cooking oil
  • 1 spoon fresh lemon juice
  • salt & pepper to taste (if you prefer spicy soup, use hot red chilli powder) 

Method:
  • Pressure cook lentil with turmeric powder for 3 whistles
  • in a pan heat oil, season mustard & cumin seeds, fry onions, ginger & garlic together until golden brown
  • add cooked lentil to this with coriander, lemon juice, salt & pepper, mix well
  • simmer on low flame until your desired soup consistency.
