Red Lentil Soup
Ingredients:
- 1 cup red lentil
- 3-4 cups water (or to your required soup consistency)
- 1 spoon ginger paste (garlic may be added)
- 1 onion finely chopped
- 2 spoon finely chopped coriander leaves
- 1 spoon each of mustard & cumin seeds (for seasoning)
- pinch of turmeric powder
- 1 spoon cooking oil
- 1 spoon fresh lemon juice
- salt & pepper to taste (if you prefer spicy soup, use hot red chilli powder)
- Pressure cook lentil with turmeric powder for 3 whistles
- in a pan heat oil, season mustard & cumin seeds, fry onions, ginger & garlic together until golden brown
- add cooked lentil to this with coriander, lemon juice, salt & pepper, mix well
- simmer on low flame until your desired soup consistency.
