PUNJABI Bhindi Do Pyaza Masala
Ingredients
- 2 cup cut Okra
- 1 each of sliced red onion & tomato
- 2 sp. cooking oil
- salt to taste
- 1/2 tsp. each of cumin seeds & nigella seeds
- pinch of turmeric powder
- ginger-garlic paste to taste
- green chillies to taste
- hot red chilli powder to taste
- 2 tsp. coriander powder
- 1 tsp. mango powder
- 1/2 cup thick curd (FOR VEGAN VERSION - USE COCONUT MILK)
- fresh chopped coriander leaves for garnishing
Method
- Mince green chillies, ginger & garlic, red chilli & coriander powder into a smooth paste
- Heat oil and roast cumin, nigella seeds, turmeric powder
- Add minced spices with onions and saute for few minutes
- cook okra until tender
- add tomatoes and cook for few more minutes
- add mango powder, curd; mix well and cook till curd dries out (COCONUT MILK FOR VEGAN VERSION)
- garnish with chopped coriander leaves
- serve hot with rice or roti.
