PUNJABI Bhindi Do Pyaza Masala







Ingredients
  • 2 cup cut Okra
  • 1 each of sliced red onion & tomato
  • 2 sp. cooking oil
  • salt to taste
  • 1/2 tsp. each of cumin seeds & nigella seeds
  • pinch of turmeric powder
  • ginger-garlic paste to taste
  • green chillies to taste
  • hot red chilli powder to taste
  •  2 tsp. coriander powder
  • 1 tsp. mango powder
  • 1/2 cup thick curd (FOR VEGAN VERSION - USE COCONUT MILK)
  • fresh chopped coriander leaves for garnishing
Method
  • Mince green chillies, ginger & garlic, red chilli & coriander powder into a smooth paste
  • Heat oil and roast cumin, nigella seeds, turmeric powder
  • Add minced spices with onions and saute for few minutes
  • cook okra until tender
  • add tomatoes and cook for few more minutes
  • add mango powder, curd; mix well and cook till curd dries out (COCONUT MILK FOR VEGAN VERSION)
  • garnish with chopped coriander leaves
  • serve hot with rice or roti.
