Pumpkin Soup




 For SPICY version of Pumpkin Soup (Serves 4)

Ingredients -  
  • 1 kg butternut pumpkin (peeled, seed removed & chopped)
  • 1 each tomato & onion
  • 1/2 tsp. grated ginger or ginger paste or powder
  • 1/2 tsp. cumin, coriander, clove & cinnamon powders
  • 1/4 cup each of milk & cooking cream (optional)
  • 1/2 tsp. crushed red chillies
  • 1/4 tsp. turmeric powder
  • salt & pepper to taste
Method -
  •  Pressure cook pumpkin pieces, tomato & onion together until tender by adding little salt
  • When cool, mash or blend into smooth paste
  • heat 1/2 tsp. oil in a pan or thick bottom vessel
  • pour blended soup mixture, add other ingredients and simmer for few minutes.
  • serve hot with bread rolls


For simple & tasty PUMPKIN SOUP 



Ingredients – ½ kg pumpkin, chopped into bite size cubes, 2 cups vegetable stock, 1 tsp grated ginger, 1 each of carrot, onion and tomato chopped, salt and pepper to taste.

Method – Cook pumpkins, onion and tomato until tender.  When cool, blend them with salt, pepper and grated ginger until soup is smooth.  Simmer for few minutes, serve hot with any toast or crusty bread rolls.
