Apple-Cinnamon Pie

Snack size Apple-Cinnamon Pie |
For snack sized pie - same ingredients (used short crust pastry sheet, baked in round aluminium foil pie tins, lined the bases with pastry sheets cut into round shapes, trimmed excess, brushed the edges with milk, equally divided the apple mixture and spooned through the pastry tins, covered the top with extra pastry sheets to enclose filling, brushed the top with milk again. Baked in pre-heated oven at 175 deg.C for about 35 minutes (until golden on top).
Ingredients & Method
2 Puff Pastry sheets
1/2 cup milk for brushing
FOR FILLING - 4 apples peeled, cored and cut into wedges, 1/4 cup sugar, 1/4 tsp. cinnamon powder, 1tsp. lemon juice, 3 tablespoon butter (unsalted)
Toss apple wedges with lemon juice, place butter and sugar in a pan on low heat, when butter melts, add apple wedges and cook until tender. Keep it aside to cool

Preheat oven to 175 deg. C, grease a glass or ceramic pie dish. Place one pastry sheet at the bottom, trim the edges, cover with cooked apple mixture
Close the mixture with second pastry sheet, brush with milk and press edges together. Make few cuts on top for steam to escape
Bake at 175 deg. C for about 40 minutes or until golden
