Amazing Maddur Vada (ಮದ್ದೂರ್ ವಡೆ)
Maddur vade (ಮದ್ದೂರು ವಡೆ) - popular & lip-smacking deep fried snack from the state of Karnataka, India; originated in the town of 'Maddur' which is situated in between the cities of Bangalore and Mysore. This is how it is prepared in my kitchen.
Ingredients - 1 cup chopped onions, green chilli to taste, few chopped curry leaves & coriander leaves, 1 cup maida (plain flour), ½ cup semolina, 2 tsp. rice flour, salt & hing to taste, ¼ cup hot oil (or ghee /clarified butter), oil for deep frying.
Method – mix everything together (except oil for deep frying) and kneed like chapati dough. Pull small sized balls out of dough and pat it to make a nice circle. Deep fry on a low flame until they are nice & crisp. Serve hot as it is or with coconut chutney & spiced (masala) tea or coffee.
