Rice Huggi
HUGGI - Also known as Khichdi or Pongal is a savoury rice dish; which is prepared using Rice, Moong Dal (Split Green Gram) and spices. This is a typical South Indian Cuisine (by the way I am South-Indian by Origin).

Ingredients: 2 Cups Rice, 1 Cup Moong Dal, 2 tbsp. Ghee, 2 tsp. Oil, ½ Cup dry grated Coconut, ½ tsp. ginger powder, few curry leaves. For Seasoning – 1 tsp. mustard seeds, 1 tsp. cumin seeds, 2 cloves, 4 peppercorns, ½ tsp. turmeric powder, few pieces of cashews & salt to taste.
Method: Dry roast moong dal for a minute, mix with (washed) rice, coconut, curry leaves, ginger powder, ghee and pressure cook for one whistle. When cool, remove from pressure cook and keep it aside. Heat oil in a separate pan, do your seasoning – mustard seeds, cumin seeds, peppercorns, cloves, turmeric powder; mix this with sale to your cooked rice & moong dal. Garnish with roasted cashews and serve hot with any raita or gojju of your choice.
