BANGALORE BRAHMIN FOOD - VEGETABLE BATH
BATH - South Indian rice dish - prepared
using variety of vegetables such as
egg plant, capsicum, potato, mixed veggies, avarekalu, methi leaves, tomatoes and so on..
Ingredients: 1-2 cup sona masuri rice, 2 cups mixed vegetable of your choice (broad beans, lima beans, peas, carrot,beans, capsicum, potato etc.), 3-4 tsps. Cooking oil, Salt to taste, 2 tsps. Lemon juice, Few curry leaves, Mustard seeds, kadlebele (channa dal), uddinabele (white urud dal) for ooggarane (tempering), Pinch of turmeric powder, Hing to taste (Asafoetida), 2-3
tsps. Bath pudi (spice powder exclusively prepared to make this dish
which contains - channadal, uruddal, coriander seeds, cinnamon stick,
clove, dried coconut – roasted and blended into smooth powder. This
powder can be prepared (in bulk) in advance and can be stored in your
pantry in an airtight container for up to 2-3 months).
· Cook
rice and make sure each grain is separate, and steam cook veggies until
tender. Keep them aside and allow them to cool for few minutes.
· In
a pan, heat oil and temper mustard seeds. When it starts spluttering,
add curry leaves, channadal, uruddal, hing and turmeric powder and fry
for few minutes in a low flame.
· To
this add cooked veggies, salt and bath spice powder and mix well.
Switch off gas/stove and leave it on stove for few minutes.
· Then
mix this spiced veggies to your steam cooked rice, add lemon juice and
mix well. This rice dish can be served hot, warm or at room
temperature.
