Badam Puri


My mother's recipe


Badam Puri - ingredients for making dough - 2 cups Maida (all purpose flour), 1 tsp. ghee, pinch of baking powder, pinch of salt, water + cooking oil for deep frying.   For sugar syrup - 1 cup sugar & 1 cup water.  Method - (for dough) In a large bowl, add the dough ingredients, mix thoroughly by adding water to form a soft dough and keep it aside.    (for sugar syrup) On stove top, in a vessel add sugar and water and boil it until sugar syrup is done (to thread consistency).  Food essence may be added for enhanced aroma/flavour.  

(for badam puris) Out of dough, make small sized balls and roll them like puris.  Fold half and then again fold to make it 4 layered.  Heat oil in a pan and deep fry them until golden brown.  Drain excess oil and drop them one by one into the sugar syrup.  After 10 minutes remove from sugar syrup and place them on a dry place.  Can be served hot, warm or at room temperature.
