ANDHRA Capsicum Masala





Capsicum masala rice


For making Andhra Vegetable Masala - same masala ingredients; just replace capsicums with 1-2 cups of mixed vegetables such as carrots, potatoes, green beans, peas & corn; for seasoning peanuts are optional.


Ingredients - 2 cups cooked rice, 1 tsp. oil/ghee, 2 sliced capsicums, salt to taste.   For seasoning - 1/2 tsp. each of mustard seeds and peanuts, few curry leaves.  For masala powder (roasted and grinded) - 3 dry red chillies, 1/2 tsp. each of coriander seeds, cumin seeds, black gram dal, peanuts, 1/2" cinnamon stick.  Method - Cook rice and keep it aside.  Roast masala ingredients and grind into a smooth powder.  In a separate pan heat some oil and season mustard seeds, curry leaves and peanuts.  Add sliced capsicums and salt and fry for few minutes (don't overcook capsicums, texture should be crunchy).  To this, add your cooked rice, grinded masala powder and if needed some extra salt to taste.  Mix everything well and serve.  This dish can be served as it is or with any gravy curry or yogurt and pickle.
