INDIAN Mango Ice-Cream


There are different versions of making this ice-cream but this is my simple, easy & tasty version.




Ingredients -  2-3 mangoes (skin & seed removed, pureed),  1 tin coconut milk, 3/4 cup icing sugar, 1-2 tsps of lemon juice, few chopped cashews (optional).  

Method - Pour the ingredients in a bowl and mix well until smooth.  Pour this mixture in an airtight container (to avoid crystallization), freeze around 4-5 hours (after 2 hours remove from freezer, mix well and refreeze) until firm.  When ready, scoop & serve chilled.
