PUNJABI Chole Paneer
Paneer Chole (Chickpeas & cottage cheese curry)
Ingredients:
- Kabul Chana(cooked) – 1cup
- Tomato puree – 1cup (4-5 tomatoes)
- ginger paste or finely chopped ginger – 1tsp
- Onions chopped – 1cup (1 or 2 onions)
- Green chillies – to taste (optional)
- Coconut cream 2 tbsp. (optional)
- Paneer – 1cup
- Ghee – 2tsp
- Garam Masala powder - 1tsp (optional)
- Chole Masala - 2 tsp.
- 1 tsp. lemon juice
- Salt to taste
Method:
- Soak Chana overnight and cook in a pressure cooker.
- For tomato puree - boil tomatoes in water, peel the skin off, cool and make a paste.
- Heat 2 tsp. of ghee/oil in a pan, fry onions, green chillies, ginger and tomato puree for few minutes.
- add boiled Chana, salt and mix well, cook for another 5-10 mins.
- Lastly, add chilli powder (for extra hot) and cook for another 2min. Then add paneer cubes, gram masala, lemon juice and simmer for few minutes (or till gravy thickens). Garnish with coriander leaves (optional) and serve hot with onion kulchas or roti.
