KASHMIRI Dum Aloo
There
are different versions of making this Kashmiri cuisine where potatoes
are fried and slowly simmered in yogurt gravy. This is my simple
version of preparing this delicious dish which goes well with rice or
Indian bread.
Approximate preparation time: 45 mins to 1 hour.
Serves 3-4 people
Ingredients:
- 6 potatoes of medium size – cut into half
- ½ tsp. each of cardamom, ginger, clove, cinnamon in powder form
- 2 tsp. Kashmiri chilli powder (or as per your spice taste)
- Salt to taste
- ½ cup plain yogurt
- 2 tsp. of chopped coriander for garnishing
- Oil for frying + 1 tsp.
Method:
- Cook potatoes until half cooked and pierce 2-3 times with a fork
- Towel dry and fry this half cooked potatoes till golden brown, drain excess oil and keep it aside
- In a mixing bowl, add all your above spice ingredients, salt and yogurt and make it into a thick sauce.
- Heat a little bit of oil in a pan and add your fried potatoes and the sauce that you prepared and simmer for few minutes. Garnish with coriander and serve hot with rice or bread of your choice.
